From "grandpa" Dick to the grandchildren, these meatloaves are considered, yum, yum good! Peggy appreciates them also for their quick, easy preparation time. Made from Brookside's own meat and eggs and mixed with local cheese, milk and onion, these individual loaves are just plain good eating. Add a fresh green salad or coleslaw and it's just what a winter family night supper needs.
Ingredients:
1 egg
3/4 c milk
1 c shredded (cheddar) cheese
1/2 c quick-cooking oats
1/2 c chopped onion
1 tsp salt
1 lb lean ground beef
2/3 c ketchup
1/2 c brown sugar
11/2 tsp prepared mustard
Directions:
Beat egg and milk in medium bowl. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into 8 mini loaves and place on a greased 13x19 inch baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves. Bake uncovered at 350 degrees for 45 minutes. Serves 6-8.
