A perfect compliment to Roast Chicken. Oil the roast chicken, sprinkle on a little paprika, put it in the oven to roast and then start preparing this perfect side dish to compliment: Potato-Tomato Gratin. This unique potato side dish is just what one needs on a cold winter night, when the snow is falling and the wind is howling--comfort food at its best.
Ingredients
1 local yellow onion, chopped
1-2 T. live oil
2 T. fresh garlic, minced
5 local tomatoes, diced
2 t. inced fresh rosemary
1 C chopped fresh spinach (optional)
4 Russet type potatoes
1 C Artisan cheese (your choice), grated
salt and pepper to taste
Directions
1. Preheat oven to 450 degrees; spray 9x13 pan with nonstick spray. (If cooking in the same oven as chicken, just leave temperature on roasting temp and adjust time accordingly).
2. Saute chopped onions in olive oil in a skillet over medium high heat, just until soft.
3. Add minced garlic, stirring constantly and cook another minute or two.
4. Stir in the diced tomatoes and rosemary and continue to cook until all moisture is evaporated. (If adding the optional chopped spinach leaves, add them half-way through cooking off the moisture).
5. Layer half the sliced potatoes in the prepared casserole dish, season with salt and pepper. Then top potatoes with half the tomato mixture and half the cheese and repeat the layering, ending with cheese on top.
6. Cover dish with aluminum foil and bake 30 minutes.
7. Let stand 5 minutes to set cheese before slicing.
