Food - Old World Carbonara

Carbonara is a classic family standby in the Wolf household of Charlton, NY. Jen Wolf learned its versatility during her many years in Germany, her husband's native land. Since moving to the area and becoming acquainted with the fresh farm products at the Saratoga Farmers' Market, she uses the dish for a tasty dinner that satisfies her entire family. Best of all she can whip it together after a hard day at work. It's a great family pleaser.


Ingredients
1¼2 lb.    M&A Bacon
1    large yellow onion, diced
2    garlic cloves, chopped
1 c    half and half (Battenkill
    Creamery)
3¼4 c    sour cream (or Argyle
    Cheese Plain Yogurt)
1    egg yolk
Additional options:
fresh spinach, sun dried tomatoes,
fresh peas - whatever is in season
or on hand

Directions
Cut up bacon pieces and cook in large pan until browned. Drain off some of the grease and put back on heat. Add onions and garlic and roast with the bacon until tender and glazed. Turn down temperature and slowly add half and half, stirring constantly. Then add sour cream (or yogurt) and continue to stir. Turn up the heat slightly so the liquid will thicken. Then turn down temperature again and stir in the egg yolk - egg yolk will make sauce creamy.  If adding in fresh spinach, sun dried tomatoes or peas add in with the sour cream. Serve over your favorite pasta. Jen likes linguine - her kids like angel hair and I like fettuccini - your choice. This meal easily feeds four.
