This time of year many are looking for a nice ham to serve for Easter dinner. Look no further than the Saratoga Farmers' Market and vendors Brookside Farms and M&A Farm. Both vendors have ham cuts to satisfy large or small gatherings. Their ham is from healthy pig stock and is free of preservatives and water that so often degrade the flavor in supermarket variety hams. Add to the ham while cooking a local honey and citrus glazing and you are going to have one delicious Easter Ham.
Ingredients:
1 ham for roasting
2 c. orange juice
1 c. Ballston Lake Apiary Honey
2 c. dry white wine
Cloves
Directions:
Place ham, fat side up, in an uncovered roaster. Bake at 300 degrees for 25-30 minutes per pound. About 30 minutes before end of cooking time, remove, pour off fat in pan, score the fat surface of ham and stick cloves over all surfaces. Mix orange juice and honey and spread over ham. Return to oven, add wine to pan and baste frequently.
