This is a wonderful easy way to enjoy a light dinner that is healthy, tasty and delicious.
It is good enough to serve for company and simple enough to make just for one. Variations are limited only by your imagination and palate. Of course the essential ingredient, the braising mix, must be fresh with at least 4 greens in the mix. The braising mix I love is found on Saturdays at K and D farm stand (Laurie's Jams) at the Saratoga Farmers' Market. Laurie's mix contains Arugula, Mizuna, Green and Red Mustard and Tatsoi.
Ingredients
3 garlic scapes
1 small yellow onion
Olive oil
braising mix
Saratoga Balsamic & Honey Concentrate
Sesame seeds
cooked pasta
optional: grilled
chicken
Directions
Chop garlic scapes and onion. In a large skillet sauté them in olive oil until they soften; turn the heat to high and toss in the braising mix until it wilts. Sprinkle with the balsamic honey concentrate and stir until it disappears. Sprinkle the sesame seeds and stir until uniformly spread out. Serve over your favorite pasta.
Note: if adding chicken, cook meat over grill and slice into pieces and add to dish after braising mix, but before concentrate and sesame seeds.
