This Labor Day I had the pleasure of attending a Slow Food Potluck held at Sheldon Farms in Salem, NY.
Slow Food lovers all over the USA held potlucks this holiday to bring to the forefront the need to provide fresh food to school children. The Capital Region event gathered a wonderful group of citizens and farmers from all over the area to share some down-home, incredibly delicious, local food offerings. It was fantastic to see the governor's mansion executive chef, Noah Sheetz and Margaret Lamb, School Lunch Director, present and showing their support of this worthy cause. Of course the main act of this event was enjoying healthy local food. I brought a summer quiche - perfect for showing off the delights coming from our gardens and easy to carry to a picnic. Hope this inspires you to try variations of this easy dinner dish depending on what is in your garden!
Ingredients
Tbsp. butter or olive oil
2 medium summer squashes, peeled and diced small
1 medium zucchini, peeled and diced small
1/4 cup diced yellow onion
1-2 ears of corn, blanched and corn kernels cut off
1 green pepper, cored and diced
1 red pepper, cored and diced
2 hot peppers of choice (I used Jalapeno and Anaheim), diced
1 large garlic clove, crushed oregano, pepper, basil and parsley to taste
salt and pepper to taste
3 fresh eggs
1/3 cup Argyle Plain Yogurt
2-3 oz Sweetspring Farm Chevre Goat Cheese
1/3 cup fresh parmesan cheese
1 deep dish pie crust, homemade
Directions
Preheat oven to 350 degrees. In a skillet on medium heat melt butter or olive oil and sauté all diced vegetables until just tender. As they are sautéing add crushed garlic, oregano, basil, parsley, salt and pepper. I used proportionally more oregano than other spices. In a separate small bowl, mix eggs, yogurt, goat cheese and half the Parmesan cheese together. Place pie crust into deep dish pie plate and layer sautéed vegetables over entire dish. Then pour in egg mixture evenly over top of vegetables. Sprinkle the remaining Parmesan cheese on top. Put in oven and bake until knife test comes out clean - approximately 30 minutes.
Some suggestion for other ingredients to use in a summer quiche: spinach, broccoli, tomato, and sausage. You can vary the cheese you use as well. This is a dish that is hard to "mess up."
