As the Congress Plaza renovations continue,
\nnew retail businesses and restaurants
\nare looking to be a part of this Saratoga
\nSprings location.<\/p>\n
Part of the draw of Congress Plaza in
\nSaratoga Springs renovation is the Main
\nStreet outdoor mall feel, something that
\nboth residents and visitors find attractive.<\/p>\n
Entrepreneur Alex Nickola was excited to
\nannounce this as the location for his Three
\nVines Bistro and Meatball Room, an Italian
\nrestaurant with a twist that he and his two
\nbrothers-in-law are hoping will become a new
\nlocal favorite place to dine.<\/p>\n
It will be located in the space between
\nPurdy’s Wines and Liquors and Rent-A-Center.
\nThe restaurant is looking to hire 20 to 25
\npeople to start.<\/p>\n
The concept behind Three Vines is not
\nthe average Italian-style restaurant, but it
\nwill still have all of the traditional Italian
\nfavorites, he said.<\/p>\n
Nickola said the “meatball room” notion
\nis one that is different. It will be centered
\naround a grand, pub-height table with bar
\nstools. This area will be able to accommodate
\none large group or many smaller
\ngroups who will be able to order off a special
\nmeatball menu.<\/p>\n
“This area will be a great place to hang out
\nand talk while enjoying a menu of 10 to 15 different
\nmeatball choices, including everything
\nfrom vegetarian to lobster to gluten free. And
\nof course, we will have the traditional Italian
\nmeatballs,” said Nickola.<\/p>\n
He said this area will have beer pairing for
\nthe specialized menu, including craft beers on
\ntap and a large variety of wine.<\/p>\n
The main side of the restaurant will be
\nmore of a traditional home-style feel. Nickola
\nsaid that menu will feature classic dishes as
\nwell as steak and seafood. He said one of the
\ngreatest features is the wood-fire stove where
\nalmost all of the items will be prepared. The
\nstove will allow the dishes to be infused with
\nspecialized smoke flavors, such as applewood
\nand beachwood.<\/p>\n
“Seventy-five to 80 percent of all our dishes
\nwill come from here,” he said of the wood
\nstove. “It’s part of our open concept kitchen
\nwhich we hope will making eating here now
\nonly delicious but interesting.”<\/p>\n
Congress Plaza is undergoing renovations
\nslated to be completed in the fall. Nickola
\nsaid he can’t give an exact opening date, but
\nis hoping for late September, or early October
\nthe latest.<\/p>\n
“It will be a very cool, laid-back environment,”
\nsaid Nickola.
\nThe name was inspired by the three brothers-
\nin-law working together, an extension of
\nthe family tree and each one of them is a vine,
