When Maestro’s at the Van Dam restaurant
\nreopens on Oct. 23, it will feature some
\nadditions to its menu, with input provided
\nby a new chef.<\/p>\n

The downtown Saratoga restaurant will
\nalso be expanding — upward — with a new
\nbanquet facility being built on the second
\nfloor. Bill Donovan, owner of the popular
\n353 Broadway establishment, said the new
\nroom will seat up to 120 people and should
\nbe completed in November, in time for use
\nwhen the restaurant puts together special
\nThanksgiving Day dining plans.<\/p>\n

The restaurant was set to close Oct.
\n11. When it opens again, new chef Danny
\nPetrosino will unveil a menu that keeps
\nmany of the great dishes customers have
\nenjoyed in recent years, but with additions
\nhe hopes people will grow to love,
\nDonovan said.<\/p>\n

Petrosino replaces John LaPosta who
\nwas a part-owner and head chef at Maestro’s,
\nbut who has moved on to pursue
\nother opportunities.<\/p>\n

Petrosino was owner of Mia Posto restaurant
\nin Saratoga Springs but sold it prior to
\nhis move to Maestro’s. He was once executive
\nchef at the Glen Sanders Mansion in
\nScotia and food and beverage manager at
\nSaratoga National Golf Club.<\/p>\n

“There’s been a lot of concern about
\nchanges at Maestro’s,” said Donovan.
\n“But it’s not our intention to redesign the
\nrestaurant. It’s been a success, to a large
\ndegree because of the menu. So the core
\nmenu, that’s not changing.”<\/p>\n

He said the menu will have some Mediterranean
\ndishes and perhaps some with
\nAsian influences. “As opposed to being just
\nan American bistro, we’ll be more of an
\ninternational bistro,” Donovan noted. But
\nthe basic menu of the past “won’t see very significant change.”<\/p>\n

Also during the brief hiatus, Maestro’s
\nwill get some fresh wallpaper and carpeting
\nin the restaurant and bar\/lounge areas,
\nas well as some new furniture, the owner
\nsaid.<\/p>\n

The second-floor events room will be
\ncalled the Empire Room, said Donovan. It
\ncan be rented for weddings, business luncheons
\nand dinners and “a whole plethora
\nof entertainment activities.”<\/p>\n

Bruce Levinsky of Merlin Development
\nin Saratoga Springs, an owner of the 179
\nyear old building that was once the Van
\nDam Hotel, has announced plans to build
\nupward and make it a six-story luxury hotel
\nwith some 176 rooms.<\/p>\n

Donovan, who is leasing the extra
\nsecond-floor space from Levinsky, said if
\nthe hotel plans move forward, it would be
\nfrom the third floor upward, and not effect
\nthe expansion of Maestro’s.
\n“Bruce has been very supportive of our
\nefforts in the building,” said Donovan.<\/p>\n

Donovan is also part owner of Harvey’s
\nRestaurant and Bar located nearby on
\nPhila Street, Saratoga Springs. He said
\nPetrosino has also been working with
\nstaff at Harvey’s to develop some new and
\ninteresting menu items.<\/p>\n

When Maestro’s reopens, he noted, there
\nwill be an expansion of the “be my guest”
\nrewards program for people who are repeat
\ncustomers. Points earned for those programs
\nat either restaurant will be able to
\nbe interchangeable between the two sites.
\n“We’re pretty excited about that,” Donovan
\nsaid.<\/p>\n

Maestro’s also has a new logo, and
\nwebsite, that will be unveiled upon the
\nreopening on Oct. 23.<\/p>\n
