A restaurant specializing in authentic Italian
\ncuisine will open later this month.
\nCampagna Restaurant will be located at 2452
\nRoute 9, Malta, not far to the south of Route 67.<\/p>\n

Owner Elizabeth Montemorano has had lifelong
\nexperience in the food industry. Her father
\nowned restaurants while she was growing up and
\ncooking was an early interest for Montemorano.
\nShe chose to go to pharmacy school, where she
\nmet her husband. Now the two are back in the
\nfood industry and are confident about the success
\nof operating Campagna.<\/p>\n

Montemorano described the cuisine as cucina
\npovera, “the cuisine of the poor.” This is an Italian
\nexpression referring to recipes that use basic
\nstaples to create exquisite meals.<\/p>\n

The recipes used are family recipes passed
\nthrough the generations. The Montemoranos
\nhave added a contemporary twist to the recipes.
\n“My favorite is the Tuscan lemon chicken,
\nserved with the cheesy polenta,” said Montemorano.
\nShe said the monkfish involtini served on a
\nbed of farro, an ancient grain dish, is also sure
\nto be a crowd favorite.<\/p>\n

Antipasti dishes at Campagna include tuna
\ntartare and beef carpaccio. Pasta dishes include
\nrisotto primavera with asparagus, peas and proscuitto,
\nand agnolotti in a sage butter sauce. Desserts
\ninclude gelato, panna cotta, and zeppole.<\/p>\n

Much of the food is prepared on premises at
\nCampagna, including the breads, pastas, sausage,
\nmeatballs and desserts. Foods that are not made in-house are locally sourced, and
\nmany ingredients are imported directly from
\nItaly, she said.
\n“We’re making everything the way my grandparents
\ndid,” said Montemorano.<\/p>\n

Campagna also has a bar that will serve traditional
\nItalian cocktails such as bellinis.
\nThe restaurant will be open for dinner from
\n5-10 p.m. Lunch hours will be added in the near
\nfuture. Reservations are recommended. To make
