Preparing and serving great food for holiday
\nparties and gatherings can add another layer of
\nstress to a person’s already hectic schedule.<\/p>\n

Since chefs, caterers, and restaurant owners
\nexperience that kind of stress every day as part of
\ntheir jobs, they have insights on managing the angst
\nassociated with entertaining and food preparation.<\/p>\n

Kevin Myers of Gaffney’s restaurant in Saratoga
\nSprings has one remedy for reducing stress during
\nthe holidays.<\/p>\n

“When I’m home, I don’t go near the kitchen.
\nI leave all the cooking to my fianc\u00c3\u00a9.” Fortunately,
\nhis fianc\u00c3\u00a9 enjoys preparing food and is very good
\nat it. For those who don’t have a partner willing or
\nable to step up to the plate in the kitchen, there are
\nplenty of other solutions ranging from relaxing teas
\nto cooking with wine.<\/p>\n


\nPatrice Mastrianni, owner of Serendipity Culinary
\nand Fine Arts Studio in Saratoga Springs said
\nit’s all about preparing ahead and freezing.<\/p>\n

“There are so many recipes that freeze beautifully
\nand you can just pop them out of the freezer and
\ninto the oven with a minimum of hassle,” she said.<\/p>\n

Christmas cookies are one item that lend themselves
\nwell to freezing. Fruit pies are another item
\nthat’s great for making ahead of time and freezing.
\nHowever, Mastrianni cautioned against freezing
\ncream or custard pies.<\/p>\n

Another menu item that freezes well are appetizers.
\nMastrianni said that working with executive
\nchefs at Serendipity Arts Studio has taught her
\na lot about the virtues of advanced preparation.
\nChefs are masters at knowing what will keep and
\nwhat won’t.<\/p>\n

For example, most Italian recipes freeze well and
\ncan go from freezer directly into the oven. However,
\ncooked macaroni or spaghetti alone does not freeze
\nas well. Mastrianni said that pasta sauce should be
\ndefrosted before heating.<\/p>\n

Another versatile item that can be frozen and
\nused in a variety of recipes is phyllo dough. Filling
\nphyllo “cigars” with spicy meats and veggies is an
\neasy way to create excellent and easy finger foods
\nfor family and friends.<\/p>\n

Other items that do not freeze well are cooked
\npotatoes, milk and cream sauces, fried foods, cabbages,
\ncelery, radishes and lettuces. Mastrianni
\nalso stressed the importance of labeling and dating
\nfrozen items.<\/p>\n

If the actual preparation comes easily to a person,
\nbut they still suffer from holiday angst, a calming
\ncup of tea will provide some soothing relief.
\nHayley Miller, co-owner of Saratoga Tea &
\nHoney Co. in Saratoga Springs said she swears by
\nThe Perfect Tea. Developed in Japan specifically
\nto reduce stress, it contains an amino acid called
\ngaba cha that is purported to alleviate stress and
\npromote restful sleep.<\/p>\n

Gaba cha also has a natural sweetness to it,
\nwhich precludes the necessity of adding sugar or
\nartificial sweeteners.<\/p>\n

The Perfect Tea is available at Saratoga Tea &
\nHoney Co. and can also be included as part of a
\ngift basket for friends and family who may be in
\nneed of relaxation and sleep throughout the year.<\/p>\n

For Tony DiDonna, third generation owner of
\nDiDonna’s South Shore Restaurant on Saratoga
\nLake, hanging out in the kitchen with a nice glass
\nof wine and letting his fianc\u00c3\u00a9 take over the cooking
\nis his “cup of tea.” That, along with laughter and
\njust having fun is his antidote to holiday stress
\nand anxiety.<\/p>\n

He also suggests taking advantage of the
\nwonderful and more eclectic “takeout” options
\nbeing offered by so many local restaurants. Most
\nhouseholds are dual income and neither partner
\nmay have the extra time to prepare food in advance,
\nbut they still want to entertain. Taking advantage of
\nthe expertise of local chefs makes sense and menus
\nrange from full course dinners to finger foods and
\nhomemade Italian recipes like DiDonna’s “zucchini
\npalmadoro.”<\/p>\n

Ryan McCormick, executive chef at Forno Bistro
\nin Saratoga Springs, also likes to let others put on
\nthe apron at home.<\/p>\n

“I don’t feel any stress when I’m at work, but
\nwhen I cook at home, it really gets stressful because
\nI realize what a mess I’m making,” he said.<\/p>\n

It certainly helps to have someone on hand to
\nclean up after assembling a major holiday meal.
\nBut many people are chef, server and dishwasher
\nat home. McCormick recommended “keeping it
\nsimple” for the holiday dinner by sticking to one
\nentree, like a roast – preferably one a person is
\nfamiliar with before and knows the recipe well.<\/p>\n

He advised against trying something new or exotic
\non the night of the big feast.<\/p>\n

McCormick also suggested “keeping the sides
\nsimple.” Green vegetables are his go-to sides
\nbecause they can be steamed, saut\u00c3\u00a9ed, roasted, or
\nboiled easily and they add colorful and nutritional
\nbalance to the meal. He said adding interesting
\ningredients to the mashed potatoes is a simple way
\nto add the “wow” factor in the meal.<\/p>\n

His favorite mashed potato additions include
\ntruffles and parmesan cheese, caramelized red
\nonions and gorgonzola, and sun-dried tomato pesto
\nmashed potatoes.<\/p>\n

Treating oneself and perhaps a partner to a
\nrelaxing dinner at a restaurant is also a way to take
\na breather from holiday madness. The key here
\nis to relax.<\/p>\n

“Too many people these days come out to eat
\nand not to dine,” said Myers of Gaffney’s.<\/p>\n

He noted that people are too often seem to be
\nin a hurry and forget to appreciate the little extra
\ntime it takes to prepare a wonderful meal. Instead
\nof harassing a waiter and wanting the meal to appear
\ninstantaneously, people should embrace the
\nleisure of dining out and use the time to sip some
\nfine wine, put down the cell phone and share some
