Hamlet & Ghost opens this month on
\nCaroline Street in Saratoga Springs.\n<\/p><\/div>\n<\/div>\n
A new establishment, Hamlet & Ghost, opens
\nthis month on Caroline Street in Saratoga
\nSprings, in the heart of the city’s thriving bar
\nscene.<\/p>\n
Owners said it will add a new dimension to
\nthe Saratoga Springs hospitality experience, providing
\nhigh-quality, custom-crafted drinks and
\nsmall plates of food in a “welcoming, industrial-chic,”
\nhistoric building.<\/p>\n
In contrast to the local norm, Hamlet & Ghost
\nwill accommodate only as many guests as it can
\nseat, the owners said.<\/p>\n
It is located at 24 Caroline St., on the corner
\nof Putnam Street, in the portion of the building
\nthat was last Silverwood Gallery gift shop. In
\nrecent years, it was home to Boyce and Drake, a
\nplumbing, heating and air conditioning company.<\/p>\n
\nThe building was also once a feed and grain
\nstore in the 1870s. It became a hardware store
\nduring Prohibition.<\/p>\n
The new d\u00c3\u00a9cor features large windows facing
\nboth Caroline and Putnam Streets, paired with
\nthe curved, angular bar, and accented by the
\nwooden floors and tin ceilings.<\/p>\n
The newest plan for this storied venue is the
\ncollaborative brainchild of three hospitality
\nveterans.<\/p>\n
Brendan Dillon, Hamlet & Ghost owner, was
\na bartender at Max London’s Restaurant & Bar
\nfor the past five years, whose other hospitality
\nexperience includes Verde Restaurant at Stratton
\nMountain in Vermont as well as several other
\nSaratoga establishments.<\/p>\n
Chall Gray was the operator of six acclaimed
\ntap rooms and craft cocktail bars, most notably
\nthe Top of the Monk in Asheville, N.C.<\/p>\n
Alex Straus, a Saratoga native and hospitality
\nveteran of more than 17 years, has opened
\nnumerous bars on the West Coast, including the
\nTao Beach in Las Vegas, and most recently EP\/
\nLP in Los Angeles.<\/p>\n
“We wanted to create a space where everyone
\ncan enjoy a well-crafted cocktail in a relaxed
\natmosphere, without feeling crowded out or out
\nof place,” said Dillon.<\/p>\n
He said roughly 50 people at a time will be
\nhosted in three different seating areas: a European-
\nstyle banquette along the front windows, a
\nclassic bar counter in the middle, and an intimate
\narea with small tables and banquette in the back.<\/p>\n
Capacity will be managed with care by way
\nof limited reservations combined with a text\/
\ncall availability list based on a first-come\/first-seated
\npolicy.<\/p>\n
“We don’t want anyone to be forced to stand
\nor feel congested. We want the authenticity of
\nthe promised experience to be maintained, and
\neveryone to feel comfortable–whether by themselves
\nor with others. In terms of my approach at
\nthe bar, our best cocktail will be not simply the
\none I love to make, but rather the one each patron
\nloves the most,” said Dillon.<\/p>\n
Hamlet & Ghost plans to be open Monday
\nthrough Saturday from the late afternoon until
\nmidnight during the week, with a 2 a.m. closing
\ntime on the weekend.<\/p>\n
