Maestro’s at the Van Dam restaurant on
\nBroadway in downtown Saratoga Springs
\nclosed in November, but its owner is opening
\na restaurant in the spring at the McGregor
\nLinks Country Club.<\/p>\n
Maestro’s At McGregor has retained the
\nservices of chef Mike Pietrocola who will
\ntake over the helm at the new location,
\nscheduled to open in late March, according
\nto owner Bill Donovan.<\/p>\n
Pietrocola has been executive chef at the
\nMohawk Golf Club in Schenectady. He will
\nbe chef and director of food and beverage
\nservices at Maestro’s.<\/p>\n
“When we closed Maestro’s, we did not expect
\nto reopen,” said Donovan. “The Adelphi
\nGroup was not interested in the Maestro’s
\nbrand, so we maintained ownership of the
\nname and all branded items, including things
\nsuch as signs, menu covers, the website, and
\nthe Facebook page. We thought someone in
\na start-up situation might be interested in
\npurchasing the brand.”<\/p>\n
\nDonovan, along with business partner
\nNick Adie, owns both Maestro's and Harvey's
\nRestaurant & Bar on Phila Street, Saratoga
\nSprings. Together with chef Danny Petrosino,
\nthey started Symphony Catering some 15
\nmonths ago.<\/p>\n
"In addition to the fact that we received
\nan offer we simply couldn't refuse, we felt
\nthe sale of the restaurant would allow us to
\nfocus our energies on the Symphony Catering
\noperation. The intense growth we had
\nexperienced placed a significant strain on
\nthe restaurant, which shared its kitchens
\nwith Symphony. We knew our catering business
\nhad tremendous potential, and it was
\nclear we would need to relocate Symphony to
\nmeet future demands," said Donovan.<\/p>\n
While looking for a new location, the opportunity
\nto house Symphony's operation
\nat the McGregor Country Club in Wilton
\nsurfaced. One condition the owners of Mc-
\nGregor stipulated was that Symphony would
\nalso have to service their dining room, which
\nhad previously been run by other restaurants
\nin the area.<\/p>\n
Donovan said basing Symphony Catering
\nat the venue "will give us a considerable
\nadvantage because it will allow us to develop
\nand grow the number of weddings and
\nevents held on the grounds."<\/p>\n
According to Donovan, Pietrocola will
\noversee Maestro's as well as any Symphony
\nevents held at the McGregor Country Club,
\nwhile Symphony partner and executive chef
\nDanny Petrosino will manage all events held
\nat alternative venues. Symphony has caterered
\nfor many venues in the area including
\nthe Canfield Casino, Saratoga City Center
\nand the Saratoga Auto Museum.<\/p>\n
Pietrocola has extensive experience in
\nmanaging and operating restaurants and
\ncatering services. He has been at Mohawk
\nsince 2008. Before that he owned and operated
\nPark 54 in Clifton Park and was chef
\nat The Clare restaurant in Schenectady, the
\nname of which was changed to Pietrocola's
\nafter he became sole owner.<\/p>\n
"While I enjoyed my time at Mohawk, I
\nam looking forward to once again being able
\nto serve the general public," Pietrocola said.
\nMohawk is a private club, while McGregor is
\nsemi-private and its clubhouse restaurant is
\nopen to the public.<\/p>\n
"I appreciate and honor club members and
\nwill ensure they receive every courtesy from
\nthe Maestro's staff, as is their due. I am also
\nexcited to once again experience the energy
\nand challenges that come from a constant
\nflow of new guests to a restaurant," he said.<\/p>\n
He noted many of the more popular dishes
\nat the former Maestro's will be on the new
\nmenu. "However, the new restaurant will
\nhave a more casual feel than the Broadway
\nlocation and that will be reflected in the
\ndishes we will offer."<\/p>\n
The clubhouse dining rooms will accommodate
\n130 guests, while there will be
\noutdoor seating for 148. The club's banquet
\nhall will accommodate up to 100 guests for
\nweddings and events.<\/p>\n
Pietrocola will appropriately assume his
\nnew position on Feb. 29.<\/p>\n
"We are updating and expanding our
\nkitchens and refreshing the dining rooms,
\nbar, and public spaces. While I'm optimistic
\nthere'll be interest from former employees at
\nthe Broadway location, we'll be holding a job
\nfair on March 5 to fill both front-of-house
\nand back-of-house positions," he said.<\/p>\n
The new Maestro's at McGregor will be
\nopened to members in late March and the
\nrestaurant will be officially opened to the
\npublic in late April.<\/p>\n
Lunch and dinner will be served seven
\ndays a week through September, after which
\na seasonal schedule will take effect. Updates
\nregarding the opening and job fair will be
