Salt & Char, an upscale steakhouse, will open

The trifecta of restaurants scheduled to open
\nin the Adelphi Hotel in Saratoga Springs and at
\nthe site of the former Maestro’s restaurant are
\nonly the first of many projects envisioned by
\nAdelphi Hospitality Group.<\/p>\n

Toby Mild\u00e9, president of Richbell Capital
\nLLC and owner of the historic Adelphi Hotel,
\n365 Broadway, formed the Adelphi Hospitality
\nGroup after meeting with renowned chef Gray
\nKunz and finding that they shared a vision for
\nthe culinary future of the region.<\/p>\n

Mild\u00e9 said he met Kunz through a mutual
\nfriend in the hospitality industry. After sitting
\ndown together on several occasions to talk
\nabout Milde’s vision for the Adelphi Hotel-and
\nthe Saratoga region in general, they found their
\nvisions aligned and decided to form a partnership.
\nThey envision three projects.<\/p>\n

The first–Salt & Char–is expected to open
\nthis spring in the Van Dam building, 353 Broadway,
\nformerly home to Maestro’s.<\/p>\n


\nMild\u00e9 said Richbell Capital has invested approximately
\n$2 million into its transformation.
\nThe main focus of the menu will be beef, which
\nwill be locally produced and sourced. Kunz is
\nthe architect of the menu which, according to
\nMild\u00e9, will be constantly evolving in order to
\noffer the finest culinary experience.<\/p>\n

The other two restaurants scheduled to open
\nin the Adelphi Hotel have not been named as
\nyet, but Mild\u00e9 noted that one will be a fine
\ndining experience in a "brasserie" style, while
\nthe other will be a more casual, open-fire type
\natmosphere.<\/p>\n

Mild\u00e9 said that the Adelphi lobby bar will be
\nanother place for guests to meet for cocktails,
\nraw bar selections and lighter fare.<\/p>\n

Both Mild\u00e9 and Kunz anticipate a long partnership
\nand are excited about future projects,
\naccording to Mild\u00e9.<\/p>\n

Born in Singapore and brought up in Switzerland,
\nKunz began his culinary training in the
\nSwiss city of Bern as chef apprentice to Fredy
\nGirardet, a highly acclaimed chef in Europe.
\nSince then, he has enjoyed a stellar career in
\nthe U.S. and abroad.<\/p>\n

He has won James Beard Foundation's Outstanding
\nChef awards and a Best New Restaurant
\naward and is in the foundation's "Who's
\nWho of Food and Beverage." Restaurants that
\nKunz has opened with critical success include
\nCaf\u00e9 Gray and Grayze in New York City, as well
\nas Caf\u00e9 Gray Deluxe in Hong Kong. He is also
\nthe author of "The Elements of Taste."<\/p>\n

Richbell has developed a number of residential
\ncommunities in the area, including The
\nPaddocks of Saratoga and The Kensington at
\nHalfmoon.<\/p>\n

The Adelphi Hotel closed following the summer
\n2012 season. The owners originally hoped
\nto reopen by the summer of 2014, but the project
\nproved more complicated than expected when
\nthe building was determined to be structurally
\nunsound. The long-awaited reconstruction of
\nthe 137-year-old hotel was started about a year
