Christian Weber is ready to start up a
\nbig, 620-gallon, brewing system at Common
\nRoots Brewing Co. in South Glens Falls.<\/p>\n

The opening comes after months of trial
\nbrews with a pilot system one-twentieth
\nthe size, extensive renovations to convert
\na former warehouse into a brewery and
\ntasting room, and all the other details
\ninvolved in getting a new business started.<\/p>\n

Weber, the head brewer, and his father
\nand business partner, Bert Weber, are just
\nwaiting for licenses to arrive to schedule a
\nsoft opening and, soon after that, a grand
\nopening.<\/p>\n

Common Roots plans to include some
\nbarrel-aged beers in its mix of traditional
\nand specialty brews. The beers will be
\nconditioned in used barrels purchased
\nfrom vineyards and distilleries that were
\nno longer able to use them for their original
\npurpose.<\/p>\n

Bourbon barrels, for example, will come
\nfrom two nearby distilleries. Those barrels
\ncan only be used once to age bourbon, said
\nWeber. They can be used again to produce a
\nbourbon-tinged beer; then again for beers
\nwith less of a hint of bourbon or for “wild
\nbeer,” made using wild yeasts and bacteria.
\nIn the end, some of the barrels may be
\ndismantled to become handles on the beer
\ntaps, he said.<\/p>\n

New York state’s recently-adopted
\nCraft Beer Act, which will allow Common
\nRoots to serve beer by the glass in the
\ntasting room, is “very exciting and a game
\nchanger for how we operate that space,”
\nWeber said.<\/p>\n

Instead of a space to sample by the sip
\nand purchase to take out, “the tasting room
\nwill be a welcoming space for beer enthusiasts
\nand community members to hang
\nout and enjoy a variety of Common Roots
\nbeers, fill growlers, and purchase bottled
\nbeer and brewery merchandise,” he said.<\/p>\n

Promotional merchandise, including
\nbeer glasses and Common Roots hoodies,
\nwill be on sale, but there will be no food
\navailable.<\/p>\n

The exact mix of beers remains a
\nclosely-held secret and will not be made
\npublic until the brewery opens, Weber
\nsaid, probably in late August or early
\nSeptember.<\/p>\n

“Our beer portfolio is clearly something
\nwe are most proud of. After all, brewing
\ngreat beer is the reason we are opening
\nthis brewery in the first place. It is also
\nthe one card we are playing close to the
\nchest until the soft opening,” he said.<\/p>\n

Common Roots joins a growing number
\nof craft breweries in the Saratoga and
\nGlens Falls area. It will becoming one of
\na dozen or so on a new Adirondack Craft
\nBeverage Tour devised by the Adirondack
\nRegional Chamber of Commerce that
\nincludes breweries, pubs, distilleries,
\nand wineries in Saratoga, Warren and
\nWashington counties.<\/p>\n

The hope is that the introduction of
\n“brew tourism” will encourage visits to the area at all times of the year, beyond
\nthe traditional summer season. Organized
\nin early July, the Chamber has been distributing
\nmaps for self-guided tours and
\nprovides information on its website, www.adirondackchamber.org.<\/p>\n

“Upstate New York is already on the trajectory
\nto be a craft beer destination,” Weber
\nsaid. “The Saratoga\/Glens Falls region
\nis rich in cultural amenities and the craft
\nbeer community is increasingly becoming a
\npart of that mix. Common Roots is excited
\nto join the currently established breweries
\nto help make that possible.”<\/p>\n

The Webers, father and son, brewed
\ntheir first batches of beer at home in 2005
\nand continued as home brewers.<\/p>\n

As a graduate student in New Hampshire,
\nChristian Weber was an apprentice
\nbrewer at White Birch Brewing in Hooksett,
\nN.H. Although persuaded by his New
\nHampshire experience that the craft beer
\nindustry was his destiny, he completed
\nhis degree and, until last January, was
\nexecutive director of the Lake Placid Land
\nConservancy. His father is a retired BOCES
\nhorticulture and landscape design teacher
\nand active with Cornell Cooperative Extension’s
\ncommunity gardens program.<\/p>\n

Raw materials for the beers–grains,
\nhops and yeast–will come from a variety
\nof sources. They will use locally sourced
\nproducts when they are available. For now,
\nhowever, the grains come form all over and
\nthe hops, mostly from Washington state.
\nMuch of the yeast will come from an inhouse
\nyeast laboratory.<\/p>\n

“Yeast is amazing,” Weber said. As beer
\nbrews, the amount of yeast increases
\nrather than getting used up. Different
\nstrains produce different tasting beers and
\nthey will be sorted and propagated in the
\nCommon Roots laboratory.<\/p>\n

Common Roots is located at 58 Saratoga
\nAve. (Route 9) in South Glens Falls, in the
\nformer warehouse of an overhead door company.
\nThe telephone number is 321-4735 and
\nits website is www.commonrootsbrewing.com. Plans are for the brewery and tasting
\nroom to be open seven days a week but hours
\nhave not yet been determined.
