The ashes of the beloved Chocolate Mill brought forth a stylish new phoenix in the form of a new type of juice joint — cold-pressed juicing is not only trendy; it’s much more healthy! The MacLean Family, owners of Circus Cafe, the Crown Grill, and Realty Saratoga are at it again with this innovative concept!
Cold-pressed juicing is an evolving trend in Manhattan picking up speed and popularity. Demand is outracing the suppliers’ capabilities as juice operators open multiple locations to keep up.
After travelling extensively in the city to gain inspiration, the MacLean Family put the advice and ideas from fellow juice enthusiasts and store owners to practice in the local region, giving us authentic Big-Apple Juice with local familiarity.
To make their juice the best way they can, they bought the latest model of Norwalk Hydraulic Press Juicers. This famed brand manufactures state-of-the-art juicing equipment. In addition, they’ve hired one of the best, most experienced juicers out there to train their team.
The shop offers not only a variety of cold pressed juices, but also smoothies (with optional supplements and boosters), “grab and go” healthy sandwiches and salads, and juice cleanses. Christel MacLean expresses their goal to “allow everyone to have a great tasting and healthy drink or meal at any time of the day.”
As local entrepreneurs, the MacLeans understand the importance of working with area businesses instead of bringing in outside competition and foreign interests. That’s why they work with local farms including the Kilpatrick Family Farm of Saratoga Farmer’s Market renown.
Even for management, they’re employing local passionate health enthusiast Chelsey Backus, a yoga teacher from Chelsey Yoga Everywhere and Saratoga Hot Yoga. Chelsey says she’s “very excited to be a part of this project” and that she feels “honored to help bring such a wonderful up and coming trend to my hometown.”
Cold pressed techniques extract juice hydraulically instead of using the usual centrifugal method. The centrifuge creates heat, which breaks down the vitamins and enzymes. As a result, cold pressed juice remains true to the nutrient content of the real fruit.
