After a very long day in the kitchen at 15 Church, one of Chef Michael Mastrantuono’s favorite “go to” dishes is also so easy that even the most culinarily-challenged cook can pull it off. Here’s what you’ll need:
One package of high quality pasta – (choose your favorite type)
Freshly shave garlic
Shaved parmigiana Reggiano cheese
- Bring salted water to a boil and add pasta.
- While pasta is cooking, add a tablespoon of EVOO to a skillet and bring to a high heat. Add garlic, anchovies.
- Drain pasta (set aside small quantity of pasta water) and toss anchovies and garlic into pasta. Add chili flakes and a small amount of pasta water, as needed. Finish by adding shaved parmigiana Reggiano and garnish with parsley.
Pair this simple dish with an Italian wine – Chef Michael recommends “Baby Amarone” – and you have a perfect “go to” dish.
