One Slice, Everybody Knows the Rules: New Saratoga Slice Fest to Feature “Pizza Stakes”

Move over, Travers Stakes. There’s a new Triple Crown coming to the Spa City this August, and it’s topped with extra mozzarella and a healing twist.

A high-end boutique startup, the Spring & Slice Society, has announced the inaugural “Saratoga Slice Fest” (officially known as the Saratoga Spring Water Slice Off) on August 1, 2026. 

This isn't just a festival—it’s a high-stakes competition where local pizzerias will face off against a secret weapon: dough fermented with 100% authentic Saratoga mineral spring water.

From the Big Apple to the Big Spring

The married duo behind the Society and festival, Luca and Elena “Lanie” Vallerone, recently relocated from Manhattan to Saratoga Springs for what they call their “retirement passion project.”

Having spent decades sampling the finest thin-crust, large slice, New York City-style pizza across the five boroughs, the Vallerones became obsessed with the chemical composition of the dough.

“We moved here for the lifestyle, but we stayed for the water,” says Luca. “Saratoga has world-class dining, but we realized the city’s most famous resource—the mineral water—was being ignored by local chefs. We’re here to prove that the ‘Saratoga Funk’ makes for the world’s best under-carriage.”

The “One Slice” Stakes: Three-Wave Schedule

The festival is modeled after a day at the races, divided into three post times. To keep the judging pure and the field moving, attendees are limited to exactly one slice per pizzeria. No seconds. No substitutions.

  • 1:00 PM Post Time | The Maiden Special Slices: The “Cheese Only” round. Pure technique.
  • 3:00 PM Post Time | The Allowance Slices: Heavy toppings, specialty meats, and complex sauces.
  • 6:00 PM Post Time | The Feature Race: The Freestyle category. Anything goes.

The Vallerones will compete against Saratoga County pizzerias and restaurants to see who's dubbed the pizza champion of the Spa City. BWP has already signed up - who else will get in on the action?

The Paddock & The Scorecard

The Paddock tasting area is open to all ticketed handicappers. To ensure total impartiality, slices will be paraded out on numbered silver platters. Every guest receives an official scorecard to rank the “Big Three” of pizza: Crust, Sauce, and Structural Integrity.

As the Vallerones say: “One slice, Saratoga—everybody knows the rules.”

The Science: The “Sulfur Secret”

If you’ve ever tasted the mineral water from the springs around Saratoga, you may have noticed that several carry a bold (sulfuric) profile. If you’re skeptical, Lanie claims they’ve cracked the chemistry:

  • The Scent: A proprietary charcoal-ion filtration system neutralizes the odor in a high-temperature oven while locking the minerals into the dough. 
  • The Flavor Lock: High iron content interacts with the acidity of premium tomatoes to create a “flavor bond” that prevents the cheese from becoming greasy. 
  • The Aeration: A 70/30 mineral-to-tap water ratio creates micro-pockets of air that make their pizza crust 40% lighter than a standard slice.

Save the Date for August 1, 2026

The Vallerones are currently scouting venues—ideally Congress Park or the Spa State Park—to stay as close to the water source as possible. While the Paddock is for judges, the rest of the park will be open to the public for food trucks and family activities like bounce houses and face painting.
